Lovely, private, small hotel off the beaten path in Taos - a half mile walk to town. The decor and intimacy were everything a Taos getaway should be - if you like that kind of thing. Of course, the highlight was Nicolas' breakfast - custom-prepared for the few tenants in shoulder season. The green Chile omelet, the hash browns and perfectly cooked crispy bacon were only ou**atched by the best bread pudding ever. His trick? Using day old croissants in a perfect meld of flavors, including chocolate - and topping with a delicious sauce. Another plus for Palacio is its sister hotel where you can use their pool and spa services. We didn't, but were glad for the option.
